The Buenavista mill takes traceability so seriously that they register each producer’s cherry at reception and keep track throughout the process. Since the farms are so remote, the farmers deliver cherry by hiring taxis to drive down the mountain. At the mill, they dry ferment the coffee for 18 hours, wash it with a demucilager then dry it on raised beds or by using mechanical dryers at 95º F. The mill recently started Sol de la Mañana, a scholarship program for the producers’ kids which sets aside 10¢ per pound.
