Isaias Cantillo Ossa continues to produce high quality coffee with an eye for detail while using his unique fermentation cycle. He pre-dries the coffee at a lower temperature for 2-3 days to wick away moisture then moves it up to hotter covered raised beds, known as Serrandas, for 2-4 weeks. This year he invested in a moisture meter in order to ensure that all of his parchment stays in the 10.5-11 percent range, which stabilizes the parchment.
