Alirio Aguilera Ospina cultivates his coffee on eight hectares near Palestina in Huila. When he recently decided to pursue specialty coffee, he changed his approach to production by improving cherry selection, separating by variety, extending his fermentation time and building parabolic solar drying beds. The results of these efforts, combined with healthy trees under a balanced shade canopy and a unique pyramid approach to drying, show clearly in the cup.
