Emilio Gamboa cultivated this coffee in the San Pablo de Leon Cortes region of the Tarrazu Valley on three of his beautiful farms: Carrizal, El Rosario and Teresita. The cherries ripened evenly this year throughout the farms, which enabled them to pick the bulk of the harvest at once while still only picking the ripest cherry to meet Emilio’s high standards. The Gamboas leave 5-10% of the mucilage on the bean when they remove the fruit of the cherry, which rides the line between honey processed and washed processed coffee to create a sweeter and more viscous cup.
