We designed our Decaf House Blend with an architecture that’s open enough to function well as Decaf Espresso in addition to a variety of brew methods. We carefully balance coffees from Latin America and Indonesia to achieve a flavor profile which is clean and smooth with a moderate body. Our decaf passes the same quality requirements as all of the other coffees offered on our menus.
Our Decaf House Blend was decaffeinated in Mexico using the ‘Mountain Water Process’ (no chemicals are used). The green (not roasted) coffee beans are immersed in water. The water passes through a special filter which extracts the caffeine. This water then contains the soluble components of the coffee beans which hold essential flavor elements. The flavor saturated water, now free of caffeine, is reintroduced to the beans, which allows the coffee to retain most of its original flavor profile. As a result of this process, we obtain coffee beans with only a trace amount of caffeine remaining.
Latin America
The Latin components of our Decaf House bring dynamic flavors to the table. They provide elements of chocolate, honey and clean fruit. These fully washed coffees express themselves through the subtle flavors in this blend. We carefully select our decaf Latin from producers within the structure of our existing relationships. Attention is paid to each detail of cultivating and processing these coffees.
Indonesia
The Indonesian component of the blend instills our Decaf House with body and sweetness. We utilize excellent semi-washed coffees, typically from the Aceh Province on the Island of Sumatra, to add a cohesiveness that gives weight and substance while binding the other flavor elements. The sweet, syrupy cup that Sumatra offers becomes fudge-like in espresso and contributes a velvety mouthfeel.
