Smallholder farmers from the mountain areas of Sapan, Perangian, Ke'pe, and Minanga work with the Toarco Company which uses four strict quality standards: cup quality, altitude, number of defects, and size of the bean. They also instituted strict cherry ripeness standards, a clean and controlled fermentation process and gentle drying of the coffee in rice dryers over the course of 48-72 hours. Screen separation further sorts the coffee into a final lot which constitutes the cleanest expression of this washed coffee.
