We’re happy to offer the Cecovasa on our single origin menu again this year. In 2009, the Cecovasa cooperative constructed a new dry mill in Juliaca without the aid of any loans. We selected this lot from their Tambopata cupping lab, which works closely with farmers to ensure quality and assist with agronomy and processing. These smallholder farmers depulp the beans from their cherry using hand cranked depulping machines, ferment them in small plastic tanks, wash them by hand and then sun dry them on patios.
